Again, thanks guys. I fried up the entire batch when I got back from fishing Oneida "alone". I had enough for another 20 patties. Not to worry, my neighbors and son helped me to dispatch the spoils of war. Also, I cut the tail off one of the fillets (which has no bones) and fried it to get the actual taste of the pickerel, unadorned with spices and coatings. As most of you said, It has a distinctive sweet taste and is very very good. See that, at 70 I am still learning.
