Eddy's recipe

chop them raw in a processor, it helps to dice them first bones and all. I like to add some lightly sauteed sweet onion, and red bell pepper, perhaps some garlic. Fresh dill or Basil, beat a couple eggs and pretend you are making meatballs. Mix the sauteed stuff, and the fresh herbs, add the eggs and breadcrumb, make some patty's and chill them in the fridge for 1/2 hour. Make up a egg wash / breading station, then get a pan ready. Bread and fry!!! Serve with some Tartar !!!

Rg...that sounds good especially with the dill sauce.....will have to try it.....caught a bunch in the pikerel derby today on Oneida....we boated 48 pikerel several rockies and 5 huge bass, lmb and smallies....didn't dare take pictures though.

Yo Bob,

As usual, I bastardized your recipe and combined it with a little bit of Edddy's and made my patties late in the evening. After cooling in the fridge, I fried 2 of them on the griddle. I had one and my wife who is an unbridled critic had one. We both agreed. The word is "delicious" . You guys didn't warn me about proportions. It seems 2 pickeral with all the additives creates enough patties to feed an army. After I get back from fishing with Eddy today we are going to do in the remainder of my batch along with Rita's potato salad.

    Jim I try to make a bunch all at once...  I lay them on cookie sheets and freeze.. Than I take 4 at a time and vacuum seal them..
Cook them the way you like them.. I like mine wrapped/sealed in foil and cooked on the grill.. Served on a bun with cocktail/tarter sauce, mayo, lettuce and tomato..  Sometimes a slice of cheese melted over it... ;D ;D ;D ;D

never have done the patties, but i keep any pickerel over 24" I know will some will scoff at the notion but , pickerel are better than eyes filleted and deep fried if you can deal with a bone here and there.. Very sweet meat..
