i would get about 100 or so and freeze and pickle them about 10 per qt

I have gotten them in the marinas on the sound late in the year .....great pickled or smoked

let me start with this-''DO NOT EAT RAW FISH''- and pickling DOES NOT KILL all of them to kill
all of them you need to freeze the fish below  0° for about 48hrs
this is what i do,
1-get fish --keep on ice till you get them home
2-clean and fillet them put about 20 TO 24 FILLETS[about 10/12 fish] in a zip/lock and freeze
---for 48hrs or better
-
salt makes fish meat tough [so it will not turn to mush]

vinegar brakes BONES down
-

------PICKLING---
this recipe is for  ONE QUART
--1 pound of fillets
--3 tablespoons of water[spring water NOT town water]
--1 teaspoon of allspice or 2 tsp of picking spice[i like allspice]
--3/4 cup of sugar
--3 large onion slices[thin]
--3 cups of WHITE vinegar[5%]
--3 bay leaves
--1/8 teaspoon of black pepper
---------------------------------pickling solution for one quart-------------------
in a small GLASS pan boil 3 tablespoons of water with 1 teaspoon of allspice
-
in a big GLASS pan boil 3 cups of vinegar, 3/4 cup sugar, 3 bay leaves, 1/8 teaspoon of
pepper and put others in you like[ginger,hot pepper, ]
DONOT cut back on vinegar if you want it sweeter ADD sugar 
-------------------------------get fish ready for pickling---after freezing----------
1-put fish in a  glass bowl with a gallon of water/cup of salt[NOT TABLE SALT] in refrigerate
---over night this will pull the blood out this helps stop the fish from going bad
2-after  doing -1-pat fish dry and  put in a flat bottom GLASS pan with about 1/4in salt
-- on the bottom place fish SKIN down on salt till salt is covered with fish then cover the fish
with salt and so on till full
3-refrigerate for 5 days[NO LESS]check every day you want fish to stay white , may need to
--dump some of the liquid out. this makes the fish tough so it will not get mushy
4-after the 5 days you need to get the salt OFF,soak in cold water for one hour changing the
water 5 times
5-the quart jar put 2 'COLD' cups of the pickling liquid in,some onions,some fish, till full
--now is the time to put in garlic or hot peppers,or ginger or others
6-refrigerate for 5 days before trying may keep in ref for 6 weeks??

Pickled herring is really good . I got my limit of them today .

the hudson and mohawk by me are stuffed full of herring right now.   Massive schools anywhere there is moving water.  

Caught a big walleye yesturday that had two whole herring in its stomach.   That's a first for me.
