The Mrs. Cousin was coming out from Long Island for a visit so I held off on the Spatchcock chicken until Tuesday. It was a big hit with her Cousin, she said she'd never seen anything like that before...I told her I'm certain there are folks on Long Island who grill Chicken very similar to what I did!
Before... seasoned with McCormick's Roasted Garlic and Herb seasoning
The little can in the back of the first pic is my "poor man's smoker". It's nothing more than a soup can with two 3/8" holes drilled about 1/4" up from the bottom and 180 degrees apart. I then drill a bunch of 5/32" in the bottom of the can to allow the ash to fall through and allow air flow. Throw in a handful of chips of your choice and light them with a torch through the 3/8" holes until you get a nice smoke rolling. It adds that nice touch of smoke that you wouldn't otherwise get using a gas grill. A half can of chips will smoke for an hour or better.
After... 5-1/2 lb. bird cooked to perfection in a little under one hour.

I suffered through a rack of pork ribs with potato salad with a nasty strawberry short cake with the misses real whip cream , it was torture

Good eats indeed. These just came out of the smoker for my afternoon snack. I grew giant jalapenos this year and they were so big my wife decided to add chicken inside with all the regular stuff - Chicken wrapped in peppers wrapped in bacon.

Mmmmmmmmm.....bacon. I grew some giant jalapeņo myself this year. Darned things got to be 6" long. They've mostly gone into the pickle jars though I have some coming in that will go to salsa.i like your smoked, wrapped idea. Looks delicious.
Weber Potato Nails..... About $10 for the good, stainless Weber set.
Wash the taters and stick a nail through them lengthwise. Brush them with a light coat of olive oil. I sprinkle garlic powder, salt and pepper on them. Put them on the grill to roast with indirect heat. The nails help cook the centers by transferring heat. I've read some skeptical reviews, but, in my experience they work the nuts. Roasts a decent sized baking tater through in about 25 minutes at 350-400 degrees.
When they get to being done, move them closer to the coals to give the skin a little brown.
