I went on a bass charter with Captain Phil Hartman to lake Walk in Water.  Good guy and good time. Not sure if he still in business but I would look into something on that lake.  If your staying on Disney grounds , buy a rod case  and bring a couple of your own rods .Bring them even if you don't stay at disney because there are always places to  throw a luer..
I'm not a golfer but my in-laws all are and we stayed at Nick Faldos resort a few years ago and they golfed and I fished the hazards  . ;D

The thing I found is most bass charters either drift and or float shiners. Kind of  boring to me, like golf .    ;D
Go on a snook charter..

Not far away is Kissimmee.  Check out Lake Tohopekaliga.  You will find guides and tackle shop at Big Toho Marina just outside of town.  B.A.S.S. has held events there.

Go rent a pontoon boat. A lot cheaper than a bass boat, go find some lilly pads and toss a wacky rigged trick worm up against them and hang on..
