Beer batter works fine, just get a nice hoppy beer, fine ground cornmeal and some flour...but messy.

I like to to the usual, flour dredge, egg/buttermilk dip then a nice mixture of italian seasoned breadcrumbs, flour and old bay seasoning...then into the oil

Sounds like my kind of fry    When I first read your post I thought you said "happy beer"?   Hoping for a crappie fry here but the water is still a little to cold?
