Like my avatar?  :afro:

Do I :clapping:  Where's your little bass friend these days ???  She must be up to 8 pounds by now and waiting for you to meet her again

Wow, that's eerie!  Mss. Watson is one of my inspirations at work.  My copy of of "Savoring the Seasons of the Northern Heartland" is completely dog-eared and stained (and signed).  I've been to her restaurant in Minneapolis twice.  Two of the best meals I've had in the midwest.  We now have a couple restaurants here that run on the same premise of matching the menu to the seasons.  She is a goddess.

If you like her try Charlie Trotter, a fellow alum of UW and an amazing chef.  His salmon dishes give me goosebumbs.

And just for fun... Get Nigella Lawson for comfort food.  If nothing else, you can just stare at her eyes on the cover. ;)

That's awesome man.  Any chick that cooks walleye is alright in my book ;)  I have always enjoyed her recipes and like you, I know many, many others have as well.

I fried (or was it sauteed) perch fillets in butter, after they were rolled in crushed ritz crackers.  I did use lower heat.  They were awesome!  I just sauteed some gulf shrimp in butter the other day...i put some olive oil in the pan after the butter melted.  Def helped raise the smoke point.  Plus you tend to get this filmy stuff in the bottom of the pan.  I guess i did learn something from all those nights aimlessly staring at the food network channel (and Giada  ;)).

You want to cook them, not fry them in butter.
...exactly.....frying tasty fresh walleye fillets in butter is taboo...might as well use super syn motor oil on high heat lol....jkg...gently on low heat....OMG....I'm getting hungry....Grump

any fish fried in butter tastes rancid slowly cooked in butter takes longer but it is nice to have a change every once in a while. its just easier to use oil and shake and bake ;)

slippery when wet
