Potatoes O’Brien

Ingredients: 
2 bags frozen, diced potatoes*
1 tsp. salt
½ tsp. pepper
1 can cream of chicken soup, undiluted   
2 cups shredded cheddar cheese
2 cups sour cream
1/3 cup melted butter
2 cups crushed corn flakes
* I use diced potatoes w/onions & peppers

Recipe instructions:
Thaw potatoes 1-2 hours in refrigerator. Mix all ingredients except potatoes, melted butter, corn flakes, and ½ cup of cheese. Add potatoes and mix. Pour into a 9x13 baking dish. Cover with crushed corn flakes and top with cheese and drizzle melted butter.
Bake 40-45 minutes in a 350 degree oven.

  Stew is amazing! My bride said its my best ever ;D









The prep work;
1lb baby carrots sliced
1 celery heart sliced
1 large Vidalia onion diced
1 large head of garlic sliced
1lb baby Bella mushrooms sliced
1 tbsp each fresh oregano,tyme, rosemary
4 lbs moose in seasoned flour, I use salt, pepper, granulated garlic, and Cajun

  Now you can use regular carrots and celery or any onion you want, but theres an old saying when it comes to soup, you get out what you put in. These are sweeter and it comes through.

Carmilize your veggies, add in the garlic. Let that cook for another 3 mins then add 1/2 cup bacon grease. Add your moose and mushrooms browning the meat. Add your herbs and some crushed pepper. I use our dehydrated blend of japs, Hungarian wax, cherry, and this year carolina reaper  :o


Deglaze the pan with a beer, darker is better. Add cold water till it's about 2 inches above the rest. Bring to a boil, then cover and simmer for 2 hours.


Add 1 lb baby red potatoes.Check your meat for tenderness. While that's going on make a nice dark rue. Once youre satisfied with the meat add a tsp of beef base, I use better than bullion.
Add some frozen peas and bring to a boil stirring regularly. After 20 mins taste, a just if you need too, then stir in the rue and simmer for another 5.

 I as gifted some moose burger and steaks a while back  , steaks were delicious, and so tender , fully dressed burgers were out standing
