I use this with trout and salmon and think it would work for you as well. Take your fillets, coat them in flour, then coat them in mixed up eggs (beat up like you were making scrambled eggs) then bread them with italian bread crumbs (about 3 cups in a freezer bag, with a 1/8 to a 1/4 of parmasian cheese mixed into the bread crumbs) they come out of the deep fryer really yummy and tasting GREAT.
