Gotta sear them, then do them slow until they are 125 inside.
Then wrap in foil and let them sit and rest for like 30 minutes.
I mixed up a butter, olive oil, rosemary baste and basted it during the slow part of the cooking in my pellet smoker using hickory pellets.
The remainder of the basting sauce I poured over the steak before wrapping it.
The steak was unbelievable, but the shrimp stole the show.
I did them on the smoker at 200 using the hickory chips while the tomahawk was slow cooking (and then resting).
Last 30 minutes I coated them with Sweet Baby Ray's.
