Had a few questions about fiddleheads from some members so I am bumping this thread. Good time to go get some.
Had a few PM's about fiddleheads so I bumped this post I did a few years ago. Disregard the times I mentioned now is the time to get them.
I know that this is off topic but I had a few of the members asking about how to identify them from a previous post I did so I took some pictures when I was out on one of the rivers in the area yesterday. Unfortunately most of them have gone by in my area but I am sure up north there are still plenty to pick. Started out picking them quite a few years ago with my father and grandfather in the early 60's. Was a family ritual in the spring for us. Now it is a ritual for only me.
This is what they look like when they are first coming out. The golden coveriing on the heads of the fonds stands out and is a good identifier. The fuzzy ones that you see on the side of the roads are not fiddleheads. Stalks look like celery stalks.

These are good picking sizes. The heads are still tight and haven't started spreading out. I leave a few heads on the fonds to reach full size to allow the plant to continue to survive for the next year.

These are still pickable but are just starting to spread out.

The ones in the back and side are gone by but the ones in the front are still pickable.

Most of the patches I pick are on the edges of rivers and streams although they can be found in other wet locations. Caught two bows here.

Hopefully this helps those who asked for pictures. Great this time of year catching trout and fiddleheading at the same time.

Yep, I found that out. Opened my back door and said "Awesome! I have fiddleheads growing right out my door!!" Two days later I realized they were ferns. They look like a fiddlehead before they frond out.

How far down the chute do you break them off? I assume you leave the roots for the future? Also if you take them all off one plant will it die? And what about preparing them? You can PM all that if you like lol

Sounds like a prime location. Take a pic next time you might have found a good spot.

Nothing better than pan seared in butter :laugh: But ?I must admit there are other ways..including steaming etc...

Picked or pickled cause those are great too....sorry but you have piqued my cooking senses..Now I am hungry to serve up potato fried Salmon or trout with a nice red sauce including fiddleheads..thanks Franky for making me hungry ;) Now I just need to go out and catch a few :P

Yes all edible. Just a good washing is all that is needed. If they are in the frig for a few days the ends will need to be pinched off.

You build up a immunity to it. I ended the season with 165 lbs. deboned last year. It's about gone. The other two nights from here out will consist of striped bass and Flounder. Can't wait Til the garden starts producing

Fiddleheads should go through a hard boil before you do anything with them (except perhaps pickling?) ~ there are some nasty bacteria and pathogens that like to live on and around them.

I like to give fiddleheads a blanch before I do most other types of cooking with them to kill potential foodborne pathogens that could be present due to their prevalence to live in silty/sandy riparian zones.
There are so many things you can do with fiddleheads. Here are some of them!

I added blanched fiddleheads to a generic homemade mac and cheese recipe before I baked it (sort of like adding onions or anything else for that matter before baking). Came out quite well actually, and I also added cooked fiddleheads to a homemade parmesan alfredo (that doesn't get baked) and that was good too although not as photogenic.

I think I posted a couple here and there, but probably not all at once! 8) I'm definitely missing Maine and the abundance of fiddleheads...although I have found a few good patches here. Plus, fiddleheading isn't as popular down this way, so nobody picks them!

Tonight's dinner: Roasted fiddleheads and fresh ramps in pasta with a ricotta/parmesan sauce. It was very nice.

Ramps are wild leeks. Very potent. Allium tricoccum In the last picture I posted, I chopped the leaves up and mixed them in but also put them on top. With the striper, I cooked pieces of the bulbs.
They taste somewhere between onions and garlic, and can be eaten raw or cooked. If eaten raw, prepare to have dragon's breath for days (even after multiple brushes of teeth).
They grow leaves in the spring, which is when they are easily harvested. After they flower, the leaves turn yellow and die back. The bulbs can be frozen, but the leaves are fragile and don't freeze well without turning them into pesto. But they do make an awesome pesto (chopped fine with some walnuts and mixed with olive oil) that preserves well in the freezer.
I didn't find any when I lived in Maine, and I haven't searched enough in NH. But where I grew up in NY, I can go up on the hill and find extremely large amounts...small patches, to acres of them! They are prone to over-harvest in some areas because they grow slowly.

Outdoorsman you got me thinking about these ramps. What type of location are they found? Near a stream? You said on a hillside. North or south face? Yours look fresh did you buy them? Probably would be good to eat to keep the blackflies away.

Bill I was brought up on them. We would pick pillow cases full and freeze them up. I'm sure you have walked through many spots in your stream fishing expeditions.

Those look great. I'm sure I have walked by a few of them in the past. Take a picture if you think you find some heads and post it we should be able to tell you if they are or not.

I've got to go find some this year. I love mincing them up real fine and adding to the fish batter and to hush puppies for a spring bullhead fry.

Still no luck with fiddleheads though. I found plenty of hairy covered ferns but no ostrich ferns.

I wish I had the knowledge to be able to pick a meal out of the wild, that's a real talent. My brother in law does some shrooming, is part of a club that does it. It's taken him a few years to get real confident with eating what he finds.
I have a fiddlehead stash I found years ago while walking the dog. It's the timing that is tough, short window of opportunity.

My folks are from Poland, probably the most know country to mushroom hunting other than Russia. We use mushrooms for everything especially on certain holidays where by tradition we do not eat meat. Cabbage and shrooms fill the table in ways that you would never imagine. With that said, my father told me he picked about 5 varieties of which the most sought after is the king bolete and plentiful in the old world. I took those skills and knowledge and now pick well over 30 edibles. There are still a handful that elude me but sometimes you can look for hours and walk 300 miles and you still do not find them. Timing is key and so is the climate and region. The King, Lobster, blewit and morel are on the top of my list to find. Some day, I will find them...its those that keep me going.

Bill I was brought up on them. We would pick pillow cases full and freeze them up. I'm sure you have walked through many spots in your stream fishing expeditions.
Any preferred method of freezing them? Ive blanched them for minute and then vacuum sealed them. They are a little mushy when thawed after . Just wondering if someone has a better procedure?

I bring a pot of water to a boil then dump them in. When the water starts to reboil I take them out and put them in a bowl of cold/ice water for 3-5 minutes then take them out and put them in a strainer. Then I dry them on a towel and package them up. I think that you might be boiling them too long.

Thanks , that's basicly how I do it , don't really boil them. I might not be drying them long enough.

With all the fiddlehead talk I figured I had to try.....burgers on the griddle with sautéed fiddleheads
Boiled first then right into ice cold water...sautéed with olive oil garlic an fresh squeezed lemon...nice an crunchy an great flavor

I have a smaller version of that griddle...that runs off a 1lb propane bottle..I brought once ice fishing..cooked up sausages an peppers.... I will bring it this yr 👍🏻👍🏻

A friend dropped off a 5 gallon bucket of leeks and a couple quart bags or fiddelheads. I haven't had them in over 40 years. The leeks were great, but OMG the ferns were fabulous. Just steamed with salt and pepper and lots of butter.

Had these for the first time Sunday night while camping. My buddy & I went along the 'scoggin in ME (no fish, water was ripping) and there were all kinds. Fortunately I had my cargo shorts with big pockets. Filled both sides. Wife boiled them for a minute, drained, patted dry, then on the skillet with some bacon fat. Threw some other stuff on them, not sure what (I was three sheets to the wind & not paying attention by now) but man those were good!
I knew they weren't the roadside ones. My buddy told me they grow in floodplains next to rivers. Everything seemed right so I took a stab & picked them. Had with a burger & a Fiddlehead IPA, was only fitting.
