WHAT IS YOUR FAVORITE WAY TO PREPARE FISH?
« on: Jul 14, 2012, 04:32 PM »
Was wanting to fry up some perch in butter. To those who prepare fish this way, do you dust it first in flour, or, just fry them plain in butter?

There are so many ways it is hard to say. A little twist on your method is to put the panfish on skewers and paint a little butter on them over some coals. Takes a short time and the smoke flavor is great.

X2 on the Andys.  I usually soak my fish in beer for 10-15 minutes and then put them in the red Andy's mix.  I also add coarse ground pepper, paprika, cajun seasoning, and a little bit of lemon pepper to the Andy's mix.  Coat them in the mix and toss them in the oil bath.

I like to soak my fillets in either jalapeno juice or banana pepper juice and then bread and fry.

Go to the nearest dollar store and buy a box of cheap instant pancake mix, put some in a bag and shake your fillets in it . Then fry them in butter. You will never go back to plain flour :) :) :) :) :)

And then do you drink the left over beer that you soaked the fish in?

This is a post I like.  gonna try the pancake mix.  Recently had Salmon on the Grill.  Buttered it and then added McCormicks Grill mates Smoke house Maple, Chopped Onions, Lemon Juice, Garlic Salt, Lemmon Pepper, and Parsley.  Was not bad, but have been reading up on it and thinking about trying a marinade the next time?
