Been sniping tree rats off the bird feeder hoping to get the SOB that is in my attic. I've been looking for different recipes to try and came across this one. Looks good to me.



Hopefully, In a few more days I'll have enough to give it a whirl and report back.


As a side note, after over 50 years of skinning them, I finally found a method of skinning them that eliminates hair on the carcass. Do it under running water in the sink. Soak them down good. Then while under the faucet, cut across the middle of the back about 2" long. Again under running water, put your fingers in the cut pulling in opposite directions and peel the hide off like a sock. The water keeps 99% of the hair off the meat.

Making a bunch of walleye filets stuffed with Ricotta cheese,eggs shredded parmesan cheese,butter , spinach and cranberries and almonds , see how it comes out !

Spent a lot of today testing appetizers for our Christmas Eve party.

Breaded/ fried Italian sausage meatballs and smoked sausage links in Sweet Baby Ray's "Sweet and Spicy "
Deep fried sausage / cheese raviolis breaded with Italian panko with an Alfredo dip
Nacho platter with home grown, pickled jalapeņos, home made salsa and cheese
2 lbs of shrimp with my nearly famous cocktail sauce
Bruschetta with pesto and asiago cheese
Pepper jelly/ cream cheese dip
Phyllo pizza cups with sauce, pepperoni and cheese.....and cheese......and maybe some cheese



And whatever my Son and Daughter happen to bring.

Tasting went well👍
