Taste of summer time! Venison vegetable with barley! This soup is all about the prep..... all fresh veggies. I'm using the lower leg meat from a whitetail, celery, carrots and onion. Garlic and fresh herbs, scallion thyme and rosemary . Red and yellow peppers, fresh off the cob sweet corn, baby spinach, baby bellas, yellow squash zucchini, sweet peas, French green beans and pearled barley. Yummy!

Thanks man, it really is. So many fresh flavors. I add a hefty pinch of my dried chili peppers so it's got a nice kick too!

It's also called Mississippi Pot Roast.


But instead of the rolls, Donna bought a package of low carb flatbread mix.
We're going to try that.
And instead of chuck, I am using a round roast I had in the freezer.

Also some leftover grilled veggies from last night's dinner.

Ham layered with taters, cheese and a nice white sauce. Finally bought a mandolin today to slice the taters all the same My knife skills are more toward chopping and carving. The mandolin made perfect slices so everything should cook nice and even.

My Bride wants some waffle fries and I'm thinking potato chips.

I have one of these that works great when I want to make scalloped potatoes and ham.
Slices both the ham and potatoes paper thin if I want to.
But yea, it's way better than slicing the taters by hand Bob.

This came out killer
We used this low carb flatbread mix that I used to make flatbread pancakes to make the sandwiches out of.
Also substituted Muenster cheese for the provolone because that’s what we had on hand.
The meat had a very different flavor.
Very nice.

That was a pic from the recipe on line.
Not our sandwiches Bob.
As I said, we did ours on home made flatbread I did in a skillet from some low carb mix donna bought.
It was pretty decent.

I've been searching flat bread and Naan recipes. My Bride and I have always enjoyed Naan and Flatbread pizzas.  It's time we revisit those.
