started back working on road today ,early but with no reel winter contractors wanna get rolling!!!!
so it was some perogies i made and froze over winter for dinner tonight
crockpot corned beef going in at 4:30 in morning when i leave for work ,will be fall apart when i get home and make the cabbage and potatoes

Very nice DD ,found out may have to wait to do my corned beef till this weekend, wife on overtime at hospital rest of week,so probably make it Saturday when both be able to enjoy it !

Well, I'm under way.
Rubbed up a small point ( it's just my Bride and I) with brown sugar, cracked pepper and paprika. Let it rest in the fridge for a few hours.

Cooked on the Weber indirect for 30 minutes or so to set the crust

Prep the veggies. A bed of carrots and onion, cabbage wedges and potatoes.

Everything cozy in the pan. Double covered with foil and back on the Weber at 350 for a couple more hours.

 
I'm getting really hungry in the meantime.

There was a lot of it at the grocery.

All I can say is wow.....what a meal.





The beef was super tender. The veggies and cabbage were also full of flavors and tender as can be.

Definitely a once a year meal.

Smoked pork butt..... half left as is, half simmering in sauce for pulled pork. So effin good  8)

Did this one a little different, smoked it last night till mid rare, then chilled it. Wrapped it in foil tonight and cooked it at 350 till it was 160 then let it rest. So juicy and tender....

I’ve made corned beef many ways, but baked is always the best.

I found the recipe on Weber's site. Only tweak I made was to add chicken stock rather that water. Total cook for this 1.5 lb point cut was about 2.5 hrs at between 325 and 350. The winds came up towards the end of the cook so I put it in the oven for another 20 minutes at 350 to finish. Meat was 195 when I took it out. I wasn't especially thrilled with the cabbage done that way. I prefer it steamed through. It lost a lot of its texture. The potatoes and carrots were awesome.

Can't wait to make some Ruebens and I found a recipe for corned beef and cabbage egg rolls that we're gonna try this weekend.....if there's any left.
