I also enjoy this thread for a get away from the craziness! Some great cooks on here and my kind of cooking!! I can’t think of one item or recipe that didn’t sound good for all these years...

For Easter we are doing turkey this year.
Green bean casserole, mashed potatoes, Brussels sprouts and I’m sure some other goodies/snacks etc! Just the wife, the boy and I! I hope you all have a nice one!!

Forgot to mention that I got yeast!!  ;D
Dough is made, but not sure it is rising like it should....everything else went according to plan on making the dough. I will let it go another hour or 2...not like I’m going anywhere....

That looks pretty spectacular. I've got everything I need to do it from scratch. Except.....no peas for us. I'll probably add in some of our home grown frozen wax beans instead.

I'll make the crust and I have a couple packages of Red Lobster Cheddar Bay biscuits for the top. That ougt to work.

I used a cast iron Dutch oven and parchment paper...it’s delicious!

Spiral ham for the three of us, scalloped potatoes in the slow cooker in lieu of smashed with gravy and a veggie TBD. Love grilled asparagus but hate to fire up the grill just for that

And I want to make split pea soup with the bone as I always do for them too.
(I have some left over rib bones I saved from months back that were in the freezer I will add to the stock)
But this way I can have their pkgs and their soup ready for them to eat tomorrow.
Maybe even a skype Easter dinner???

I'd rather have the mashed potatoes with dinner. We'll have a ham and scalloped potato casserole later in the week. We like to mix in a bunch of veggies with it  and make it a one dish meal.

Made the bottom crust for the pot pie, baked it and did the prep work for the filling. Roux is cooling, veggies are diced, potatoes cooked, chicken is cut up, seasoned a bit and resting in the fridge.

The biscuits are going to be a flakey buttermilk recipe. I'll cook the filling and let that simmer a bit while I whip up the biscuits.  Then put it together and pop it in the oven.

My mouth is watering already.

I do the same Bob.
And I always make gravy from the ham dripping.
Yup!  It's more of a sweet sauce, but my kids all love it.
