Wound up making a clam and scallop scampi, It was devoured before I could snap a pic but it's a pretty simple recipe. 1'st you make a nice scampi butter, I like to use salted butter softened with garlic, lemon juice, cilantro and hot sauce. Then I steam the clams in a nice white wine. As soon as they start to pop add the bay scallops. once they are open remove and de-shell them. Strain out the juice and let it settle for a couple mins. Scoop the clean juice off the top and discard the dirty stuff. put the juice back in the pan and bring to a simmer, then fold in the butter slowly so it doesn't break. I like to add a corn starch slurry to thicken it a bit. add the seafood and let it simmer for a min. Try not to over cook the seafood so have your pasta ready and pour it over and eat it while its hot!
