Took yet another shot at home brewed pizza.






Home made dough this time. We were pleased with the texture. I think it could have been cooked at a higher temperature. Did it at 450*. Next time 500*

Very tasty anyway.

So I did a chicken noodle florentine today, been feeling a bit under the weather, not covid lol side effects from my surgeries still give me fits every once in awhile. Got up and started a stock right off the bat with a quarter split chicken I picked up last night. Couldn't and wouldn't go to multiple stores for a vidalia onion so I grabbed a red instead. Never used red in a soup before or much of anything really, I usually find them too bitter, but as I found out today if you take your time and get a nice caramel color they are, or are least this one is twice as sweet as a vidalia. I was in shock when I tasted the stock.

  So does yours Ed.
She just uses farm fresh eggs and half and half whisked.. saute ham, pepper and onions, mix in eggs pour into a 1/2 preheated pie crust and bake...

All looks great!
Heading back to camp this afternoon. Turkey hunting for 4 days. Weather looks bad but better than being stuck inside.
Dinner last night...Filets with grilled romaine and green onions!!

Yeah, it was my wife’s idea. Came out amazing. Sliced in half, with some olive oil, salt and pepper.

White Clam Sauce my way!
The stuff,



I tin of chopped or minced clams with juice
XXVO
Parsely, basil, oregano, coarse black pepper
Romano, Parmesan or asiago  for grating.
Chopped fresh garlic
Half and half or cream
And ....a nice white wine. I love DaVinci Pinot Grigio. Some for the sauce.....some for the cook.

Heat about 2 tbsp of olive oil to medium heat
Add clams with juice, garlic and seasonings and bring to a good simmer.

Have a glass of wine

Reduce by about half and grate in some cheese.


Reduce further and add in a good splash of white wine to deglaze the pan

Have another glass of wine

 Continue  reducing and add in the secret ingredient.....about 1/4 c. Half and half. You can grate in some more cheese if you like.



When its reduced to a sort of thick sauce, ladle your pasta into the fry pan. Do not drain the pasta. Use a spyder or slotted spoon.  Add a small amount of the pasta water to the pan along with the pasta. The starches in the pasta water help thicken the sauce and the pasta will soak up all that wonderful flavor.

Simmer the pasta with the sauce for a few minutes tossing it to coat.

Garnish and top with a bit more cheese.....Oh....so good!





The leftovers are almost as good. Is it sacrilege to eat italian with chop sticks?
