That halibut looks great, my cousin brought me some when he visited Alaska. That was some delicious fish.

Donna is Italian and her family had MANY types of meat for the base at various times.
I think her mom used what was available.
Sometimes I will use seafood.
Not often, maybe once a year.
She enjoys that too.

Beef, pork, lamb, ox, venison, chicken, it's all good to start the base.

Also, I like a lot of veggies.
Green peppers, onions, garlic, spinach, and mushrooms.
Diced, not too small.
Even some zucchini or summer squash at times.

I grew up in an italian neighborhood. Love italian food ......period. Best man at my wedding was Nicolo Ristagno, who became an outstanding italian chef.

I make several kinds of sauce but my staple is what i call my "cooking sauce".  I can make many different dishes using it as a base. Its not cooked to death but left to finish as i like. To me its better than making mass quantities of a particular kind of sauce. With that, its what you get every time.

I like to change it up.

Tonight its grilled or maybe broiled chicken sandwiches......depends on the weather.

Hot Italian sausage and spare ribs are the base ingredients of my sauce!

First of the year native asparagus. Side of rice with the last of the morel mushrooms from the backyard and fresh chives. Served with barbecued chicken.

I fish for those "stupid fish" BASS. Largemouth Smallmouth Stripers, and even Rock bass.
