Italian Sausage for Pizzas


  Amount  Measure       Ingredient -- Preparation Method

   1       lb           LEAN GROUND PORK
   1 1/2   ts           SALT (tender quick)
   3 1/2   ts           PAPRIKA
     2/3   ts           GARLIC POWDER
     1/3   ts           FENNEL SEED
   1       t            BLACK PEPPER
     1/4   ts           RED PEPPER, CRUSHED

  MIX ALL INGREDIENTS EXCEPT FOR THE PORK IN A SMALL BOTTLE OR DISH.
  SPRINKLE ON PORK AND MIX IN TO BLEND EVENLY. MIX SAUSAGE SEVERAL
  HOURS OR A DAY BEFORE USING.
