Our first turkey day down here in FL.
Invited my neighbor and her daughter.
Also my brother David and his wife Chris; however, she declined. They have had a very rough go of it since Ian. Whatever.
Anyway, I have a 16# turkey and began brining it tonight.

Nothing standard Dom.
What I mean to say is that I've had success with any packaged brine I buy that was on sale.
But there are tons of brine recipes on line.
The one I used on this turkey is WorldMarket Turkey Brine.

I had heard about brines over the years.
It was the other guys on DSO that convinced me to give it a try years ago.
I will never cook an un-brined turkey.
The difference is day and night.
It's like if you used an injector, without the unevenness of injecting - more flavor near the injector points and less the further away you get from the injector points.
The juiciness from brining is crazy.
I have always preferred dark meat over white; the white always was too dry.
But not on a brined bird.
Give it a try.
There is still time.
12-24 hrs is all they typically recommend.
I always do it for 1.5-2 days.

Sounds good.
I do mostly injections with butter and broth. With a mix of rub stuff on the outside..

These days I let my Daughter cook the Turkey. She’s not the worlds best cook but I try to encourage her. She’s more into take out.
My son on the other hand is a serious cook although he leans towards deserts more than he should. He’ll get my cookware when I’m gone.

I just finished making the butternut squash.
The sweet potatoes are peeled and boiling now.

Just finished mashing the sweet potatoes.
Now the Sabres’ game.

Between periods I peeled the white taters and got them into pan to boil.
I’ll mash them after the game.
Mixed a 2nd drink too.
Reposado and peach tea.

I boiled down the carcass last night before bed.
This morning I deboned it, turned the liquid into gravy, and dumped the meat back into it making turkey chunks and gravy.
I will pick up a can of peas to toss into it and will go over some wild brown rice later tonight for dinner.

We brought some leftover Turkey and the rest of the veggie platter home from my Daughter’s. ( she made a fabulous meal)
Looked at this morning and thought !……! Turkey soup!
Warming on the stove now. Gonna toss in some mini dumplings too.
