smoked 2 butts for my local american legion yesterday. injected with apple juice, garlic pepper and Worcestershire. rubbed with old bay garlic pepper and seasoned salt. smoked them@ 250* for 5 hours with a peach log and some hickory chunks to start off. after their smoke i put them in a roaster to bring to pulling temp. wish i could gobble up a pile. the house smells like blacks bbq joint. lolthey were boneless hence the skewers to hold together. out of string and figured bailing wire wouldn't be appropriate.
