There is not realy a season for BBQ and smoking meat, it's a year round thing, but I never reamember to takes pics as I go . I will try to keep up this year
Tonight I will start if off with a beer Can chicken..
This is halfway thru the gooking process, I use plenty of run and let the skin get crispy...
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3140421.jpg&hash=fd792bcf097d28991e790b488a0e818f)
Once the chicken has about 30 mins left in the cooking cycle, i start to lather on the BBQ sauce, usually three good coats
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3140423.jpg&hash=d62b8e4098e95c7f7168e4e848bba8e4)

That looks very good. I had the same idea and making mine this week. I have never thought about putting BBQ sauce on, but i think I will try it this year. I see that you put yours in a pan. Do you put anything in the pan or is it just for drippings? I usually just set mine right on the grill with out a pan.
-
I use that pan just to collect drippings and for ease of clean up. I do have anothernpan I use to cook potatoes with the chicken
-
Wrong beer ;D

Alright time to get this thread moving for 2011
the wife was feeling some seafood, and I wanted to BBQ, so here is the comprimised, Cedar wrapped Shrimp and Scallons with garlic bread
I started off by hitting the local fish market, grabbed some jumbos garlic shrimp and some sea scallops, also stopped at the bakery and grabbed a fresh loaf of bread...
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260514.jpg&hash=86b9e4d4b5964d8ca673985a46aae9c1)
the shrimp are a basic garliuc butter and herb mix, nothing special
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260512.jpg&hash=b270ab3d82338334145e600a4b647e5c)
the scallops are parprika, tomato and red pepper marinade (garlic as well)
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260513.jpg&hash=16e41eeffb7847d0310aad8ee911066a)
Once the above was ready, i soaked some cedar wraps I picked up at the local Lowes store, as well as some butcher twine
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260516.jpg&hash=2ae2692ff57e29b369571d85e300bdff)
Each wrap holds about 3 each of the shrimp or scallops
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260518.jpg&hash=786e666819fba9b864da8a3b994186f0)
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260519.jpg&hash=386316168016e8d6d498057eb210339b)
fold them over use the twine to bind them nice and tight, pack them up and you are ready to go
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260521.jpg&hash=26d79f53ed6c76e3c13701313cac00a8)
Hit them on the BBQ (atleast 400 degress) and give them 2-3 minutes a side, they should be looking like this...
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260524.jpg&hash=c240b8e480efd78853388a6222f09474)
one you you flip them and they have had there 4-6 minutes in the heat, you should be good to go, the garlic bread takes about the same amount of time but you have to watch it closer
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260526.jpg&hash=cdea55f4c929a3985bf818c3ba2eab86)
Once in the house you can leave them stacked on the cutting board for a decent presentation, people can just grab them when ready
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260528.jpg&hash=5ebe197cbb4fae21abb0b3c281f04ef5)
Cut the twine and you should see somthing like this..
(https://www.myfishfinder.com/fishing_forum/proxy.php?request=http%3A%2F%2Fi2.photobucket.com%2Falbums%2Fy28%2Ficejunky%2FFood%2FP3260532.jpg&hash=af40238844f2ca8753090b8d99957f3b)

beer can chicken is great...this thread is making me hungry for BBQ...and it is only 630am here...haha
-
Some pics from the BBQ.. these are beef tenderloin skewers with baked potato skewers.. par boiling the potato then adding some oil and rub speeds up the BBQ time and still gives you great flavor

Bassjunky, ever try the bacon explosion?
You take a lb of uncooked bacon and weave a mat with it. Then you take a lb of uncooked bulk sausage and lay it out on the mat. Then you take a lb of cooked bacon and crumble it on top of the sausage. Next you roll the whole thing up into a loaf. Then you smoke the loaf for a couple hours. Toward the end you slather it with BBQ sauce and slice and serve. Just tried it over this past weekend. I don't have pictures but there are pictures on www.bbqaddicts.com. It was a great dinner, but I think I might have liked the breakfast sandwich I made with the leftovers even better.
-
bacon explosion here I come!! what a great idea!
-
yup that sounds awesome. meat on top of meat covered with more meat and BBQ sauce...wow.
