Okay you fish and game connoisseurs...

Fish and game must be complimented with a great glass of wine.  What is everybody's favorite vineyard, type, vintage?

Personally, I like hearty/robust reds that are velvety with lots of tannins and a peppery finish.  I like to drink reds as a stand alone to relax after work, socially, and to compliment venison and other red meat game.

I like red wines from Northern California and South Eastern Australia.

Rosemount makes a syrah/cab blend that is great.  I also like Lindemans' and Yellow Tail from Australia.  Duckhorn Merlot (not cheap at $70 a bottle), Duckhorn Paraduxx (cab savgn/zinf blend), and Bogle Petite Syrah (especially 1998) are my favorite domestics.  Sterling Pinot Noir is another favorite.  Covey Run and Smoking Loon has good stuff too...

We just had a delmonico on the grill tonight and my wife and I had it with a Parducci Petite Syrah which is also very good.

For fish and poultry I like a good chilled reisling or viognier.  RH Phillips has a viognier (EXP) that is fantastic with fish and especially poultry.  I once prepared a roast canada goose over sweet onions in vodka and juniper berry sauce.  I served it with EXP and the meal was simply out of this world!

Anyone like to share their favorite wines?  I am always interested in trying new ones.

cider cider..what have you done now??? this page is far too short to discuss some of my favourite wines. red or whites from australia, washington state, oregon....penfolds grange hermitage 1981-1983 cabernet sauvignon.... henry estate chardonnay from oregon probably the best white...(extremely hard to find)....on and on the list could go...we also make our own wine (almost exclusively in whites)...grump

Cider, I'm not a wine drinker but one of my brothers works for Cakebread vineyards out in Napa Ca. and all of my friends that drink wine say it is great,especialy the Merlots with eating fish.

Cider, I have tried more wines than I want to think about.  Believe it or nor, one of my favorites for every day is Turning Leaf Merlot.  I also like some of the Australian blends.  Southwest Michigan has some very good vinyards as do Indiana and Ohio.  I don't personaly buy into the strict rules of drinking specific kinds of wine with certain foods (beef, pork, fish etc.), I drink what tastes good to me.

Grump - any wine making secrets you want to share with us?  I thought about making it but wasn't sure about the amount of work involved.  Thought it might be a huge undertaking...

Oh com'on Brian, live a little!  Beer is good when it is hot out and you need something cold and refreshing and you will sweat it out right away.  It bloats you too much though.

Try wine and if you really can't get to like that, then we could always talk about bourbon, scotch, and whisky!!!  ;D

cider...home winemaking is relatively easy once you're equipped...5 food quality pails and 5 carboys, filtering pump, and you choose which wine kits!!! and away you go... i think for around $300.00 or less you can start producing high quality wine at home for about 1/3 the cost... if you want to know more, lets get started...grump....oh and by the way, wine gives you a nice warm glow much different than beer, or hard stuff..your taste will graduate to nice dry wine as your taste buds grow...

I have a 1984 Concannon Vineyards Petite Sirah Anniversary Edition stashed away in a cool dark place. I have had it since the winery's celebration that I attended in 1984. I recently spoke with the winery and they said it would be at it's peak right now....Sooooo, do I drink it or continue to save it?

FTD - that is a tough decision!!  I like to horde (age) wine in my basement too!  However, if there is one thing that I have learned about wine it is this:

With reds, there are two types.  Those that are bottled and meant for drinking right away, and those you hold onto for 15-20 years and they mature.  After a certain time goes by, the wine will peak and then begin to go by.  The tannins will begin to break down and the wine will spoil.  It is also possible that the cork could react with the wine and spoil it.

If the vinyard that produced it told you that now is the time, I would heed their advice and give it the proper disposal it deserves!!

I know, it is like a close friend and you would hate to open it and not see it sitting in your rack anymore.  That is tough to get over.  So, go out and get a new one before you take the old one off the rack.  Simply switch them out and act like nothing ever happened!!  Twenty years from now you will be ready for another fine wine!!  ;D

I like a good Shiraz from the Hunter Valley. Lindemans, Wyndham, Cockfighters Ghost has a nice one.

Hey Grump, where do you get your kits/equipment?  Is there a mail order company that specializes in this?  I am interested in giving it a whirl sometime.

This is off subject, but a friend of mine just gave me a bunch of homemade venison sausage that is 50% wild boar.  It is a sweet italian style sausage.  He makes lots of different sausages and put me in touch with a very cool mail order company.

ftd...listen to the winery...they know...like cider said..the hardest part is to get the corkscrew into the cork, but you know.....expectation sometimes exceeds the contents....i've found this many times...so enjoy it now and rack another for a special day......que sirah, sirah!!   ;D ;D  grump

When I'm really looking forward to a nice fish dinner, I'd have to say my favorite white is a Santa Margherita Pinot Grigio, but I have to say as well that the reds do pair nicely w/ fish or anything else your not "supposed" to drink them with.

I had a nice cab/merlot mix recently w/ some trout I cooked up, but the name escapes me at the moment.  Estancia or something like that.

I also enjoy putting out some fennel bulb, roquefort/gorgonzola, and some sliced venison pepperoni/salami and a good ruby port.

d**n, these threads are making me hungry.

Oh yeah, I have had Estancia wines before.  They are pretty good too.  I like the Estancia Meritage (blend of merlot, cab sauv, and cab franc).  I like your idea of the Pinot Grigio too.

You know, the "proper" pairing of wines and foods is correct.  If you were to strictly choose wine based upon the time-honored traditions, you would find that they are great compliments.  However, I have to agree that things are pretty good when you mix it up a bit too.

I like to drink wine based upon my moods as well as what's for dinner or what I want to snack on.  Sometimes I just get a craving for a particular "flavor" and that is the only thing that will satisfy the itch regardless of what time of day, season, or food that I am eating.

I agree Cider.  Depends on the mood a lot of the time.  Sometimes it's not wine at all.  For instance I like really spicy foods (esp. thai fish or cajun fish) paired w/a Guinness Stout or Turbo Dog.  I like that choclatey finish w/ the spices. 

I generally don't get too many expensive wines, maybe $20. a bottle tops, but I like to keep a 1.5 around the kitchen for cooking and sipping when necessary.  These are usually the cheapies like Delicato, Bella Sera, etc.  My fiancee enjoys wine a lot more than I do.

sorry cider...dont know how i missed your request...i dont know what you have available your way, but when i first got started, i should have done one thing better...dont under buy carboys, or any other piece of equipment when you get started.. most beer/wine stores carry all you need to produce high quality wine at home....there's such a huge variation in kit prices, but for someone with a taste for fine wine, will know exactly what kits to purchase...i purchase some of the cheaper white wine kits right at my local supermarket...other times, i go into the specialty stores in winnipeg, manitoba and shop around to see whats new..most of the stores are super friendly and very knowledgeable as you would expect..DO NOT BE INTIMIDATED starting for the first time...i can get home after work, and start 2-3 or 4 5 gallon batches of wine, and be sitting with my feet up, and everything cleaned as well, in about 45-60 minutes...once your wine is ready to be bottled, you can make and event out of it with friends...i have bottled 60-90 in less than 1 hour...the most important thing when making your own wine...you must work absolutely clean at all times...let me know when you start the first kit... grump

I hear ya!  I really like a pint of guinness now and again.  Don't care for the stout as much as I do the draught.  I really love German beers.  Got hooked on them in the service.

One of my favorites from Bamberg is called Aecht Schlenkerla Rauchbier.  This is a very stout, dark, bottom fermented beer that has a very strong smoked flavor.  They take the malt and smoke it over beech wood and then mix it with premium hops and let it mature in cellars that are very deep and over 700 years old.

Most people don't like this beer when they first try it, but you really learn to like it after a while.  The first few sips always tasted like a bacon cheeseburger to me!!  ;D

Maisels Weisse is my all time favorite hefeweizen beer.

I'm drooling over here Cider.

When I went to Ireland, I drank mostly Murphy's stout over Guinness solely because it had a smokier flavor in my opinion.

Don't get me wrong I like draughts too.

Funny you mentioned the cheeseburgers and heffeweizen.  I've had some heffeweizens that tasted like butter popcorn to me.

That would be because they are a wheat beer and the fermentation process will "carmalize" it a little giving it that smooth buttery taste!  I have experienced that with heffe's too!

I really like a good hefeweizen with a handful of m&m's for a chaser.  I always found that combination of wheat beer and chocolate to be out of this world!

Do you think the wine filter is worth it. I have not used one yet.

I was a bit overwhelmed at first with home wine making but the instruction in the kit were very straight forward and it is alot of fun. I like to hear opinions of the pros.

the wine filtering pump is well worth the investment, especially if you intend on racking a worthwile batch....( reds).....if you are making some for fairly quick consumption it doesn't need to be filtered.....but will take longer to clear out...basically there are 3 stages to filtering...#3 filters are the finest and remove any objects over .05 microns...important to get the yeast cells out...the last thing you need is refermenting to start after your batch is bottled.  buon vino makes an excellent pump for around $110.00 cdn and will last a long time as long as it doesn't get overheated from filtering too many batches in succession..grump

Hey Cider....two things 1) where is this book of rules at for wine??  Always hear people talking about this kind for this and that kind for this??  Confuses the $hit out of me.  Any help would be great!!
2)  My Dad (tejeg2002) makes his own wine also and man is it good.  I think his Grape (guess that would be a Red????) is the best I've ever had.  Maybe when he comes to NewYork I'll have him bring a bottle or two and we can try it after a day of Chuckin'.  Just a thought.  Between Grump and my Dad, you should be all set to set up a winery of your own.  Careful though, seems homebrew wine is twice as potent  :P

Hey Steve, go to Borders or Barnes and Noble and check with the help desk to put you in the right section.  There are lots of great books on learning about wine.  However, this costs you money.

Try this for a start.  If you still crave more info, then go to the bookstore!

In the first site, follow the list of links that are on the left side of the screen.  It will tell you basically everything you ever wanted to know about wine.  There is a great link about wine basics and wine & food and how to select and pair wine.  But these are just guidelines.  Go with your instincts and taste.  That alone will tell you what you like!

If you really want to go overboard...  This site has a lot of info too, plus there is a forum there where you can talk about nothing but wine!  I don't post there.  MFF and IS are my only cyber homes!  ;D

Oh, hey Steve...  Best advice about wine.  After you read the link about the basics and learn the differences between the different types, just start buying them at random and try the various varieties.  You will learn what type you like and what you don't.  After you narrow down the type of wine you like (ie red merlot, cab sauv, pinot noir or white pinot grigio, chardonnay, reisling), then you can start to target those wines and try the offerings from various vinyards.  Then you will start to identify patterns of which vinyards you like and which varieties you like the best.

As far as pairing with food...  go with the basic guidelines at first, but then experiment and do what suits you best!!

Unfortunately (or maybe fortunately) the only way to get good at the wine game is to drink a lot of it!!

I don't care much for pinot noir's but the best I've had is from Tazmania it's called 9th Island.  Otherwise it's shiraz and cabernet sauvignon for me.  A great Shiraz is made by Bill Blass and marketed under Greg Norman.  The 2001 Limestone coast Shiraz about 14$ a bottle is awesome.  Downed another one last night with my girlfriend with some roast chicken potatoes and spinach.  Another new standout is Joel Zygot's creations marketed under 3 Thieves and comes in the new chic screwtops.  They produce an outstanding zin and cab.  It's a 750ml and about 12 bucks.  I highly reccommend it.  Gotta love red wine no whites for me.

Thanks for the info.  Now I'm really screw'd.  I usually stick with Coors Light cuz its easy for me to keep that straight.  I'll start trying different bottles of Reds with Deer and Beef (Is that how that works???) or is Red wine good with fish, like Perch and Crappies.  Either way should be fun trying different ones out.  Just have to make sure I dont get as think as you drunk I am  ;D

Thanks for the info on the wine filters.  I have not had to worry about aging the wine.  Everyone wants a taste which turns into a bottle and then I send them home with some.  My friends are good about returning the bottles to be refilled!!

Just bottled some Gewurztraminer, It is not that good.  something must have went wrong. Well next batch will start soon. Just have to decide what to try next.
Any suggestions?

There is a wine book that I hear is good and it is from the " for dummies"  Wine for dummies.

personally, i cant drink german wines...most of them are too sweet...its really a matter of choice...i like dry reds or whites...a zero and occassionally a 1... try a chardonnay or sauvignon blanc, pinot blanc... i am sure you wont be disappointed...grump

give me the good ol' farmer style wines. Like Dandilion, Pumpkin, or Elderberry. Some of thes styles of wines are awsome. With a nice little kick. I'm not into the real sofisticated stuff nor do I care to be. But a good homemade is something to enjoy. I did get a couple of bottles of Organic grown peach and a white,From my boss.  I believe they were a NY wine and they were great. Nice flavor slightly dry but very good to the taste buds. He is gone now and I cann't seem to find anything like it on the market.

do you guys recommend any books that have recipes for wild game meals and wines that compliment them? i'm new at all the hunting stuff and i love to cook. i'm only 22 so i havent been legal to drink for long and plus i dont drink anyway, but i heard a glass of wine can compliment a wild game meal well. just wondering cause i'd like to cook my wife a nice meal every once in a while. thanks
