Brookie recipes

Does anyone have any good recipes for brook trout? I caught a few last night and would like to cook em up for lunch. Thanx

Are they whole or fillet?

A good one for fillet

-Coat baking pan with  olive oil
-put down fillets skin side down.
-put on salt, pepper, garlic, couple slices of butter, parsley, little lemon, splash of white wine (if you have it)
-bake at 350 till flaky. about 20 min

I also like wrapping them up in foil, less mess and the juices get into the meat better. But if you can fill the baking dish good it doesn't matter.  Usually take them out and lay out on a plate and dump the juices over the top.

Thanx Beerman, but the 2 I have are whole, with the skin on. I was thinking about pan frying them in some simple coating....got any recipes for that?

Even better is to wrap them in foil put the same things on them salt pepper garlic parley lemon etc... but more in the middle get some fresh rosemary, comes on a stalk with the leafs sticking off it put one of those in the middle and cook it on the grill.

Pan fry-

lots of butter and garlic salt pepper  cook on med heat slower the better. Spice it up by coating the fish in some cayenne pepper.

Hay beerman: Have ya got a good receipie for a brine to soak salmon in., prior to smoking the fish.  I got a few-- BUT--the fish is either too salty or not enough salt in it, when you're done smoking it. Sure would appreciate one , if ya can help me out.  Thanks

Sorry but that is one thing ive never done. I just got a smoker and havent tryied it out yet.  Let me know what one is and i might be able to figure out how to adjust the recipe to make it taste less salty.

beerman: this is one I've tried---like eating the ocean.
3 1/2 cups of table salt in 1 gallon of water----is the brine.
Then it said: Brine 1/2" thick fillets for 1/2 hr.
                       "      1"      "       "      "    1 hr.
                       "       1 1/2   "     "      "    2 hrs.
Problem: How do ya get a fillet of fish to be equal in size. Large at front, smaller a tail.  I tried this brine on a 1/2 " fillet of salmon. Front half was'nt too bad,( and not too good) but the further ya got down the tail, was like sucking on rock salt.

What kind of salt are you using. I know it sounds weird but there are couple different variates out there and if you are just using common table salt that could be a problem.
I'll have a double Jack and Coke!!

It has been awhile since I did any smoking and this is coming from memory...Could be right could be wrong but here it is:

1 cup non iodized salt
1 cup brown sugar
4 cups water

I also always had better luck coping the fish into steaks instead of filleting them
