This is a good one and you can use Fresh Salmon as well!! Just poach the fish first. I made this years ago and you can use Steelhead too.

Hearty Cheese and Salmon Chowder

Ingredients:
2 tablespoons butter
1/2 cup celery
2 tablespoons all-purpose flour
3 cups milk
2 cups diced cooked potatoes
1 to 1 1/2 cups frozen peas, cooked
1 can (16 ounces) salmon boned, drained, and flaked
2 cups shredded Cheddar cheese
Preparation:
In a large saucepan over low heat, melt butter; add celery and sauté until tender. Add flour; stir until smooth and bubbly. Remove from heat. Stir in milk gradually. Bring to a boil, stirring constantly. Boil, stirring, for 1 minute. Stir in potatoes, peas, and salmon. Heat through then stir in cheese just until melted.
Makes about 2 quarts of chowder.

Fillets wrapped in bacon with maple syrup drizzled over.   Bake until done.

More of an appetizer, but good none-the-less   ;)

I'll have to give it up to Mr. Rgfixit! He has the best recipes on here. His fish chowder rocks, and I never tried homemade salsa on fish either until I seen him post it! Now its my favorite ;D It was a pleasure to get the chance to meet him this past hardwater season, and I hope to get the opportunity to fish with him again a few times this year
Opinions are like @ssholes. Everybody has one and they all stink.

I dunno about that one.

I normally don't care for recipes that mask the flavor of the fish.

My recipe for fish is simple and quite boring  - pan fried, seasoned with salt & pepper. Perch & walleye please, not a big salmon fan.

although I would try one out of curiousity if the platter passed by..

that brings back childhood memories.

Used to cook catfish that way, chop off the head, quick gut job, onto the stick.

When the tail stopped moving, it was done...  ;D
