Well, my birthday is the 16 th, so that's the day for smoked corned beef. Here's my recipe.

The sauce:
1 c. Beef broth
1/3 c bourbon
1/4 c molasses
1/3 c. Brown sugar
2 tbsp brown mustard.

Heat to a gentle boil then cool

Soak the corned beef in cold water for at least a couple hours to remove some of the salt
Coat with brown mustard and your favorite rub
Smoke at  250 2.5 hrs or til it hits 160* put the smoke to it in the first part of the cook.
Remove from smoker, place in foil pan, cover with sauce and cover with tin foil
Cook at 250 to 190* meat temp

Remove from smoker, reduce sauce and juice to a glaze
Coat meat with the glaze and return to smoker at 250* til, meat temp is 195*

Remove and rest for at least 20 minutes.

We like ours on kimmelweck rolls topped with sweet home made BBQ sauce.

I do miss a good kimmelweck roll. I grew up a few blocks from the original Costanzo’s bakery in Buffalo. Can’t find rolls like that in Saratoga, unless you get a sub at Stewart’s. But they’re not kimmelweck....

Party is for my mother in-law’s 80th birthday party. Have a house full of her friends in family, in town to celebrate. Party is on her birthday, the 17th. She was aptly named Patricia

Last good beef on weck I had was at a pub in East Aurora called "Bar Bills". Roast beef carved at the bar. But, they didn't have any smoked corned beef that I recall.

Thanks again for the recipe RG. Came out amazing, best of the three (my baked recipe and the traditional slow cooker/boiled recipe)

Glad it worked for you. I've got a " Texas BBQ" sauce recipe I should have passed along. It really compliments the smoked corned beef.

I have two flats ready for the smoker tomorrow.


It's a belated birthday party (mine). The weather didn't cooperate last weekend. We're doing a neighborhood "garage party" . All of our summertime "happy hour" friends will be there. Should be lots of food, beverage and fun.

Might even uncover the horseshoe pits if it warms up enough.

I've been looking for different recipes to use so I'm not dependant on expensive hard to find commercial seasoning mixes.I tried a 10# batch of baloney and 10 pounds of cooked salami using recipes from The Sausage Makers (Rytek Kutas) cook book.
I used 60% venison, 30% lean pork shoulder, and 10% pork back fat.
In the smoker.


After a cold shower.




Money shot.






Smoked with pecan wood. 1 hour at 130 degrees to dry, then added smoke. After an hour I bumped the temp up to 150 for an hour. I them bumped up the temp to 165 Untill the meat hit 155. 23 hours later, it finished. I gave it smoke for about 6 hours which was perfect.
As far as I'm concerned, my search for those two recipes is over.

That looks and sounds delicious. Now I know what I'm going to do with those two extra chunks of corned beef in the freezer. I'll spring it on the gang at camp. Thanks for it.

The baloney and salami look great.

We're planning to smoke some Italian sausage my neighbor makes along with the briscuits. I havent tried this as yet. I'm pretty new to the game. May smoke some mussels too. What the heck....it's a party.

Thought I'd better post the BBQ sauce recipe.

3 stalks chopped celery
3 cloves minced garlic
1/4 c chopped onion
1/4c white vinegar
1/4c honey
1/4c. Brown sugar
1 c katsup
1 c. Beef broth
2 tbsp Worchestershire sauce
1/4 c. Franks red hot
2 tsp cayenne pepper
2 tbsp brown spicy mustard
2 tbsp good chili powder
1/4 c butter
Salt and pepper to taste.

Sauté chopped onion and celery in butter till soft
Add garlic for less than a minute

Add all other ingredients and simmer for 20 minutes to reduce..

Remove from heat and blend in blender till smooth. Serve warm with smoked briscuit
on rolls.
 
I won't take credit for the "Texas style BBQ sauce"  it's a recipe I found....and altered a bit. Anyway, it's really delicious.

I see you put your temp probe in the side of your stick.. If you put that probe in the center of the top of stick and push it straight down you can gather a full probe reading AND you have way less leakage!
I smoke probably close to 500lbs of bologna a year and this method works the best for me

Was gonna hit Ontario today for browns but real windy when got up , so stayed home cleaned barn and smoked some ribs

The corned beef turned out great again. This time I have almost a whole flat left over. We all kind of collapsed of a food coma after dinner. I didn't get much for pictures, I was going a mile a minute all day.

Smoked some Italian and venison sausage for appetizer. I liked the Italian better than the venison.
Everyone's gone home now. Just kicking back with a glass of bourbon and a little dark chocolate. A very nice birthday party.
