Title: N. Carolina_Style Slaw

2Cups Apple Cider Vinegar
1/2 cup water
1/2 cup Ketchup
1/4 cup light brown sugar
5 tbsp salt or to taste less if you need to
3 tbsp Crushed red pepper flakes
1 tsp Fresh grnd Black Pepper
1 tsp Fresh grnd white Pepper
1 large head Cabbage cored and shredded
Note here I add one sweet onion too diced.

Combine first 8 ingredients in non reactive pan and place over med high heat stirring till all are incorporated but do not allow to boil. Reduce heat and simmer for 10 min stirring occasionally. Transfer to heat proof container this will make approx 3 cups.  Reserve one cup for the slaw. Pour one cup over slaw and allow to cool to room temp then cover and refrigerate for several hours. Makes about 6 to 8 servings.  This is spicy hot and is great with fish. I use it on Fish taco's and Fish Po-Boys. The Cabbage doesn't cook with this sauce and remains crisp.
