Tried a new style of cooking today. My son bought me a sous vide. I was very skeptical at first. Did a couple of chicken breasts and gave them a sear in a cast iron pan and let me say that they were delicious and incredibly tender

Interesting !
Corned beef nd cabbage on the Weber.

About a 3 hour cook. It’s humming along nicely.
If you lend someone $20 and never see that person again, it was probably worth it.

Cooked up some apple sauce last night..  Still have another 25lbs to do tonight.  We eat a lot of it and tired of paying for it at the store.  This comes out to $1 a jar..

Nice! We do ours in half pints. Just enough for the two us for one meal. Did 30 or so last fall.

Just finished making 3 heads worth of sauerkraut . This time I went by weight with 2% salt ( last time I tried it was too salty. Topped off a few jars with a 2% salt brine, weighted it done and caps on finger tight . I tried a few with the Fermenting lids my son 3-D printed for me. I'll burp them everyday for 2 weeks and keep my fingers crossed. Sound about right ?

Hey now!
I plan on making fish tacos this weekend and looking to try something a little different than my normal fish taco routine.

Please share your fish taco recipes / ideas.

Thanks

Small soft shells.
Donna found these shells that are mega low carb, but really tasty.
We use almost any fish and I either do it on the grill outside with lime and S&P, or sauté it in olive oil and butter in a pan with lime and S&P.
Occasionally, I will use bacon drippings instead of the olive oil and butter for added flavor.
We use a prepackaged coleslaw mix on ours.
A shredded EXTRA SHARP cheddar.
Donna likes a little garlic aioli while I use some Franks and a little Hellman's cilantro lime sauce.
