Donna has a few racks like that she used for cooling cookies and baked things like Bob mentioned.  She would cut off my jimmies if I used them.   ;)

I went on Amazon to “window” shop last night and see you can get tons of sizes.  I’m going to maybe try to find 2 square ones that fit my smaller square foil trays and then maybe they would both fit in the larger rectangular ones.

Whenever I do chicken breast it comes out dry. What am I doing wrong?  Time? temp? So I stick with skin on thighs.

Brine it!!!!

Yea, ours was good, but drier than I would have liked.
I should have brined it.
All poultry benefits HUGE from brining.
We never roast a turkey anymore without first brining.
And I generally will do it for 2 days!!!

This is especially true for boneless and skinless breastmeat.
The bones add moisture and flavor and the skin helps hold in the moisture.
However, the skin inhibits smoke penetration.
Soooo.....................brine it!

Also, smoke it heavy very low in temp for a bit to get the smoke penetration.
Then tent it.
Finish in a pan with a little liquid like chicken stock - but cover the pan with foil.

Brine is great for all poultry as Mac said. It definitely helps
 Also, the classic cover with a few slices of bacon works too.

4 probes and bluetooth.
Allows me to monitor from my phone inside the house during winter instead of contantly going outside and OPENING IT UP!!!!
If you're lookin you aint cookin.

Has alarms too - so I can set it for 5 or 10 degrees before it's time to pull things out.
Or maybe set it for 20-25 degrees before so I can baste or paint with BBQ sauce or something.

I helped a friend out a few years ago. He wanted me to really get into smoking so to thank me for helping him, he got me a Thermoworks Smoke thermometer system. 2 probes, one for meat one for smoker temp. Has a wireless handset with a range of 500’. Really made smoking easy

Got 2 racks on the Pitt Boss pellet smoker for a dinner at my sister’s tomorrow.
They still have 4-5 hrs left to go but I took a peek.

Tomorrow I’ll spritz them with some apple juice, cover them and warm them at 250 for 45-60 minutes.

Been a rough 2 weeks. Bride tested positive the night before her second dose, just got out of quarantine this morning.

Decided that after losing 10 days of good ice, I needed a pick me up. So I pulled out a picnic shoulder and hot Italian sausage to thaw and throw in the smoker this weekend.

If I wasn’t busy nursing the bride back to health I probably should have done this during the quarantine!
