My next door neighbor gifted me with some cubed venison back straps. ( he just bought a cubing machine)
Venison streak sandwich with onions and ketchup......and ......fries.


Man that was tender.

I always help him butcher his deer. The paybacks are most appreciated.

My Bride had PB&J with French fries. (Not a venison fan)

Nice can't wait to get venison again, made a jalepeno bacon burger from Angus beef we bought this summer, and yes there's a burger under that , probably best burger I've ever made ! To me of course to my taste , still bleeding ...I'm a exstream rare guy.

ZuppaToscana my way!

Chicken broth, Italian sausage, onion, carrot, potato, bacon, cream and spinach. Garlic, Italian seasonings and crushed red pepper.






A side of fresh “everything” Italian bread (oven warmed), home made croutons and a nice Pinot Grigio Made for a great meal.

Gifted my neighbor with a good helping. He brought back an empty container and a very happy face.

Love “soup days”!

Had the day off so I decided to try making home made chicken nuggets.



Nuggets and fries. They were pretty darned good. My Bride ate 6 so I know it passes. Had some left over to freeze. We’ll see hope that goes.

Got my first ever Turkey and archery harvest.  It was a bearded hen. I just breasted it out.  Any recommendations for wild Turkey breast

I used to take the breast and thigh meat from a turkey, fillet it out and make a roll stuffed with a moist sausage dressing.

Put down a good sized sheet of plastic wrap. Lay out several  lengths of butcher’s twine. Fillet the meat to about 1/2”. Lay down the dressing and use the plastic wrap to help roll the meat up. Tie it up and coat it with olive oil and savory spices. Dutch oven at 350 till its about 165 internal temp.

I used to deglaze the Dutch oven with chicken broth and add a cold roux to make a nice gravy.

Might just do something similar for my Bride and I this Thanksgiving.
