White perch

For those connoisseurs of fine fillet eating... the white perch are starting to show up. Caught a dozen last evening on the big lake. Including 6 of the largest sunfish I've seen in awhile.

Mac Attack:
Love white fish (or silver/white bass) caught in the colder waters of spring.  The flesh is firm.  And although they aren’t as mild as yellow perch or walleyes, they are not very “fishy” tasting at this time of year.
One way we like to do them is over an open fire and then tossed in wing sauce.
Great snack at night with friends around a campfire.
