Either Golden Dipt or House Autry for panfish. I don’t bread walleye or bass. I like them blackened instead.

zatarains new  orleans  seasoned  fish  breading  mix  it's  easy  just  roll  a  damp  fillet in it  and  your ready to  fry .  it's  not a  heavy or thick  breading  i  like  it  ...golden  dip is  good too and  makes  a  good  beer batter

My go to is neither bread or batter.
I prefer to simply season it, cook it, and eat it without stuff to detract from it

I keep it somewhat simple I guess.

I mix Italian seasoned bread crumbs with the Italian Panko for a little crunch.

Roll filets in flour then dip in a mix of egg and blue cheese, then bread crumb mix.

Pan fry in olive oil or vegetable oil.

Been doing this once or twice a week forever and the kids and wife love it.

I did come across some Franks ranch seasoning and mixed that in with the bread crumbs. That was good too.

Now my stomach is growling... ;D
