Ok..I searched it. Looks delicious. Found numerous recipes for smoker and grill. Are you doing a whole brisket or just the point cut?

Anyone ever try that cook with a flank or other cut of meat?

I know typically they are made with brisket, but I had the pork butt.
Soooo...………..

I've done this before and they turn out awesome.
I trimmed the excess fat last night and cubed the meat.
Then added the rub in a container and shook the pcs to cover them thoroughly.
Let them sit in the fridge overnight to really absorb the rub.

They will go on the smoker in foil pans in the next hour or so.
These will be done LOW and SLOW.
I will probably smoke for 2 hrs and then will cover each pan with foil so the meat doesn't turn to jerky.
200F will be the smoker setpoint.

I’ll let the meat come to room temp for 30-40 minutes.

Do you add any sauce to the pan while it's covered?

You might want to try this:
1 c. Beef broth
1/2 c bourbon
1/4c molasses
1/3c brown sugar
2 tbsp brown mustard.

Warm the wet ingredients and dissolve the sugar
Pour over the smoked meat about halfway into the cook and cover to cook to your finished temperature or tenderness.
when the meat is cooked, remove the juice from the pan and reduce in a large frying pan till it's a glaze consistency.
Pour the glaze over the meat and return to the smoker for 20 minutes or so.

The flavors this sauce imparts to meats is really special.

Bourbon is good anywhere.....second only to bacon. Tomorrow is scallops and super colossal shrimp, marinated and wrapped with some bacon on the Weber.

Was awesome

Still have 2 pans in the smoker at 200F

Put a little H2O in the pans befor covering.

Did some fresh cauliflower and a homemade spinach and feta cheese pierogi with the meat.

Had a bottle of Noiret to cap it.

It looked awesome, Mac. I was going to say I could be there in 7 hours! Lol.

I have to agree, bourbon belongs on ice and sipped. I've tried many bourbon marinades and they just don't do it for me. Waste of good bourbon!   ;D
     One more with the one we're after and we'll have two.

Way to round it out....sounds delish!

For us it's a quiet night...campfire and cocktails. Did a ribeye and home grown Yukon golds in parchment on the Weber with a side of garden tomatoes and cukes.

Love these late summer evenings.
