I have one we use with northerns on an open fire. First you need a 5 -10 lb northern. Cut the belly and clean out the guts. Then get about 6 sheets of newspaper and soak them in water. Fill the belly with onions , mushrooms, peppers and seasoning of your choice. Wrap the fish in the sheets of newspaper one at a time. After you have it wrapped with the newspaper put it on a grill over an open fire. let cook for about 8-10 min then turn over and cook the other side for about the same time. After your done cooking open up the paper and you can peel the skin off and the bones just pull out. Enjoy
