Looks good. I've got to do some beef sticks this year myself. I don't have any more venison. The take was down last season. We need all the ground deer for regular cooking. Is that a home built smoker?

I like the idea of using sausage for the wrap. I use seasoned burger. Something different is good. Grab a block of Habernero or Carolina reaper cheese for the middle. Great with cold beer.

I thought it looked familiar. My phone screen is small and the eyes getting old. I drooled over one of those for years, but couldn't fit it into the budget. Congrats.

I just cut them..it's less time and just easier that way.. its IMPARITIVE that they dont touch and air flow is crucial.. so by the time I try to twist them and still hang straight it's a pain in the arse

If it werent for my business I wouldn't own one. Quite pricey BUT way worth it for ththe volume I do

Doing a test run with the "Amazin Smoke Tube"

Set the Weber in the shade with the riser in place. It's running around 90 degrees



Some extra sharp cheddar, Monterey Jack, a few eggs, almonds and pecans tossed in olive oil, garlic powder, seasoned salt and pepper.


Looks to pe working just perfectly!

I really appreciate the info I've gotten from this thread.

RG, remember the cheese needs a rest period of a couple weeks to mellow as a rule. It can taste like licking an ash tray fresh out of the smoke. A bit of a rest makes a big difference.

I usually put in fridge and let it firm back up before I eat it

Good job. Smokehouse cheese, as my grandson calls it is one of my most popular things. I do 30-40 pounds a year.
