I do salsa in quarts.
I'm doing 8 more right now.
And have a full stock pot of salsa that will fill at least 16 more quarts.
Plus the 6 I did 2 weeks back.
Will probably do about 16 more next week end.
We like to have about 40 quarts canned for the winter.
Donna eats the stuff with a spoon.

Sorry, wasn't jamming you Bob.
I just figured you for a guy who makes a ton of salsa.
Especially with all the hot peppers you grow.

We eat a lot of salsa.
Use it on lots of stuff.......like ketchup.
And making it from scratch is WAY cheaper than store bought stuff.

All of the above, and.....you can control the sodium. Way too much salt in the store bought junk.

Try grilling some walleye fillets with a brush of olive oil and fresh garlic topped with salsa.

Another one I make for my bride and I is my veggie egg thing.

In a frying pan,

Sauté fresh veggies like broccoli, peppers, onion, cauliflower and asparagus in a tablespoon of olive oil till they're soft. Just enough veggies to make a single layer in the pan.

Beat 4 eggs with 1/3 cup of 1% milk
Reduce the heat to low, cover the veggies with the egg and top with some strips of cheese. We like jalapeño Jack.

Cover tightly and cook slowly till cooked through.

Serve pie shaped slices topped with salsa.
Dang, I might make that for our breakfast later ;D

I have never figured out what you hot pepper lovers have against the REAL taste of food so you have to cover it up with fire. ;D

Got that covered! Nothing better than a raw pepper but want to preserve the extras before it's too late. Found a pickled jalapeños recipe going to give that a shot as well.

Yes....I wear heavy duty gloves when handling these peppers.

Could always make some spicy chilly and freeze it? I do portions I can hadle like heat fast for like a snack..

Finished product. This is private stock so I do half pints that my Bride and I can open and enjoy without leftovers. It's a really tasty batch. We've been sampling all afternoon ;D

The batch I brewed up 2 weeks back I didn't use gloves.

My nose and forehead were red and hurt like HELL

Good think I didn't scratch my butt.

I'll tell you, just the fumes from cutting up the peppers had my nose running like a faucet. Last time I did salsa, I didn't wear gloves thinking that just washing my hands would do the trick. WRONG!

Felt like fire under my fingernails for hours later.

Good news is, they mellow considerably when cooked leaving a nice heat behind that builds and doesn't overwhelm.
