Did some wings for the family and neighbors. Smoked for 2 hours at 225* after tossing them in seasoning. Crisped them up on the grill before heading in

Doing 2 racks of ribs today.
However, the large pellet smoker stayed with the lake place - gone!!
And my smaller pellet smoker is already down in Florida.
And my electric vertical smoker that I gave to Jeff is wood-less.
And I seriously don't feel like cleaning it, going and getting some chunks of wood, etc.

So, I will do the ribs the old-fashioned way today.
I rubbed them with a basic all-purpose rub an hour ago and they are now resting on the counter.
I will then quickly braise them on the Webber.
Then half will go into the slow cooker with some Sweet Baby Ray's for the day.
The other half will go into a flat foil pan with just a little apple juice covered at 200 for a few hours to soften up and finish.
Donna, Jeff, and I like them with the Ray's, but Jeff's GF doesn't care for BBQ sauce much.

Maybe I'll snap a few pics and post later.

Awesome ribs!  Coupled with homemade sweet cabbage (Robyn Good’s recipe), and some leftover cornbread stuffing, and wax beans.  A nice IPA to wash things down.  Killer dinner.

If you were to order a new smoker tomorrow, what would you buy? I have an old electric little chief cold smoker for fish but was looking to go bigger. What do you guys like, pellets, charcoal, gas, electric? Thinking for bigger foods, turkey, rib racks etc. Low and slow. I did read many pages of the thread and surprised myself being on the second or third page! Time keeps clicking...

Oh yeah Mac I want to smoke some of the baked beans you do too! That's what triggered my brain back here! Still can't find Gramda Browns Baked Beans around here, but my wife has that figured out. I'll share that soon... 8)

Brad... do tell, I missed this setup! I'm the master of cheap and dirty fixes, but not sure on the paint for foods? I assume wood fired? I've used metal pails after burning them off, for a turkey in a bucket ground bird.

I sent you a pm. When building you have to have 5-10 as hot as you can get it going fires in order it burn all the old paint off inside most on the outside won't burn off other than the bottom and second  drawer up. This is the second one I have built this one is way better learned some stuff from first build

Just threw a few racks of ribs in the smoker. A dozen wings or so to follow for an appetizer. Going to make some fresh corn bread and smoke some beans for a sided.

Will post pics later

Did some bacon candy at camp yesterday on the smoker. Sorry, no finished pics.
Got 10 pounds of chicken thighs marinating in my rub getting ready for the bacon wrap and pecan wood smoke later.
