Maiden voyage was okay. I didn’t expect to have the best BBQ I’ve ever had going into the cook.Ribs, chicken halves and corn on the cob. Chicken came out better than the ribs in my opinion. Looking forward to next weekend’s adventure

I got lucky and scored 26 pounds of pork belly. I've been wanting to try pork belly burnt ends so I took some trim from the soon to be bacon meat and tried it. I took about 6 pounds and cut it into roughly inch and a half cubes. Then put it in a zip loc with a generous dose of my rib rub for an overnight rest in the fridge, I put them on a tray.I smoked them smoked a bit over 2.5 hours at 275 with apple and hickory. The nuggets then went into another pan where they got a generous dusting of brown sugar. Then a stick of butter with a good drizzle of honey and a touch of cider. Covered with foil tightly and back in the cooker for a couple hours more to tenderize.Final step is remove from the brazing liquid and drizzle a glaze made with BBQ sauce, apple jelly, and cider. Back in uncovered for another hour to set the glaze. They were fabulous. I also did a few bacon wrapped drumsticks for the chicken lovers here.
