The beans have been posted here before.
A can of Grandma Browns baked beans.
(We like them the best but you can use any canned beans)
Then doctor them up in a foil pan.
Here's what I typically add.
1/2# of bacon, raw, chopped into 1/2-1" slices.
Large onion diced
Peppers - green and red.  (hot if you want)
1/2 cup of brown sugar
1/2 cup of maple syrup - I use a buddy of mine's home made.
Squirt some yellow mustard into it - maybe 1/8-1/4 cup
Then start smoking at 200-225F
Stir it every 30-45 minutes.
The stirring helps to mix the crust being made down into the beans and also helps to get more smoke into the beans.
Also helps to cook off moisture and thicken them.
I typically smoke for like 4-6 hrs.
Smoke them until you are happy with the consistency.

I have added the following ingredients in the past -
mushrooms
Hot sauce
green beans
chicken
green onions
pepperoni

Get creative!

Just caught the forecast and had to call an audible. Was going to smoke Italian sausage links tomorrow but the weather won’t be conducive. Going to be a late night, thank goodness for the World Series

Half way though smoking the sausage I decided to try smoking some potatoes I had laying around. Hopefully they will cube nicely when chilled for home fries.

Haven’t tried them yet but I sure am looking forward to lunch tomorrow...

Smoked taters are really good. Last batch Idid ( before my smoker crapped out) I rolled them in olive oil and seasoned salt before smoking. They were a big hit.

I do the same but also either cut them in 1/2 or cube them up.
This way they cook quicker and the smoke penetrates into the meat of the tater further.
The skin is pretty resilient slowing down smoke penetration.

I don’t frequent this thread too often but after my third try I finally did a pulled pork that met my standards. Went with a higher temp and wrapped it in foil at 180 versus 165.  Using charcoal and wood chunks makes it more difficult to keep a constant temp but you can’t beat it when you get it right.
