Probably the first Memorial Weekend I have not smoked any meat.  Smoker is still in the storage facility.  No room for it here at the house yet down here.

I do have my Pitt Boss propane portable from the motorhome here though.
We will do dogs, burgers, or sausage on it later (Donna’s choice).  So all is not lost.

Bob Now I’m wondering if by Saturday you mean like yesterday?  If so how’d it turn out ?  I just smoked a big beef brisket, all I put on it was Montreal steak seasoning with a little added garlic powder, used apple and hickory chips @ 190 +or - think Internal temperature was at 170 when I did wrap it in tinfoil for another one and a half hours.  Lady friend says she could eat that three meals a day and now that all 11# is gone, when am I going to do another one

Saturday I made up some sausage bombs... on the smoker for 2 1/2 hrs.. at the 2 hr mark I brush sweet baby Ray's on it.... KILLER







Then yesterday I did a brisket.. WOW was that GOOOOD...
I inject my briskets with a beef onion soup ... Burrow 5 cloves of garlic through it like a mine field ... then I let it soak for 2 days in  balance of beefy onion soup ... mix... take out after 2 days.... rub down with garlic,(YEP MOOOORE GARLIC) salt,pepper,and my favorite bbq rub.... wrap in plastic film and back in cooler it goes for 2 days...
In smoker at 170 for 5 hrs...
Lay in foil, take the onion soup mix marinade and pour over brisket and wrap in foil 2 times so marinade doesnt seep out... back in smoker at 225 until internal temp reaches 160... let it rest for 2 hrs.. slice and devour!!!!!

Chicken thighs turned out great. Almost forgot the after pics. These were what was left when I remembered. My wife made a big pan of beans that went in the smoker with the chicken. With other sides and dessert, 8 people rolled out of the pavilion because we were too stuffed to walk.
Then it was sitting by the fire time. Gentleman Jack on ice and a comfy chair, life is good..

Had these sitting in apple juice a couple days…



Put them in the smoker for 3 1/2 hours  with rub and they fell off the bone. 
Along with broccoli slaw and watermelon..

I cleaned out my old verticle electric smoker last night.
I gave it to Jeff, but I need to smoke some meat and my pellet smoker is down south at the new place.

I have 8 nice large country ribs that I want to do Saturday.
I'll of course do a pan of beans too.
We are going to do some corn I shaverd from the cobs and froze last summer.
Probably won't smoke the corn - unsure - maybe I'll add it to the beans.
Too soon to tell.

Yea, adds sugar and color.
We also add red and green sweet peppers.
Jalapeños too if we want a little kick.
I also add onions, mushrooms, chives, and sometimes squash.
Always add brown sugar, bacon, yellow mustard and garlic.

Variety is the spice of life as they say.

Red onion, a cooking onion, bacon, jalapeño, yellow mustard, brown sugar, and maple syrup.  Left the corn and mushrooms out and will have them as a side - per Donna.
