If you lend someone $20 and never see that person again, it was probably worth it.

Hung some lights outside and a few other chores. Decided to fire up the smoker for some sausage and made some Buffalo chicken dip for the late games

You inspired me!

Ready for the oven later. Made a super cheesy white sauce with jalapeño Jack, extra sharp cheddar and fresh Asiago. Can’t wait for dinner!

Some leftover Chinese take out from the other night.
Stir fried the rice, tossed in 2 chopped onions and 1/2 stalk of celery chopped.  Then tossed in the various take out stuff and 2 eggs.  Also the leftover packets of soy sauce and some sugar free teriyaki sauce that was in the fridge.

Voila!

Dinner!!
It was very tasty.

Washed it down with a couple Founders All Day IPA’s

Frittata last night. Spinach, mushrooms, potatoes, onions and Italian sausage....with a little cheese.

We like our frittatas.

You say frittata.....we say omelette.............or scrambled eggs.

However, always a great easy and healthy meal Bob.
Looks good.

I Don’t flop mine over into an omelette. I sauté the meat and veggies then pour the egg mixture over it all. Top with greens and cheese, cover and cook on low heat till it sets. I’ve baked it before but it’s easier on the stove top. A nice 20 minute meal.

Last night was left over ham and scalloped taters. Think there’s some left for lunch too👍

Making chicken noodle soup when I get home from “work”.
