''Tis the season for comfort food. 👍

If you lend someone $20 and never see that person again, it was probably worth it.

Meat loaf, mashed home grown Yukon gold tartare and garden fresh wax beans for us tonight. My Bride loves meat and taters! Anything she'll eat makes me happy.

Tonight was one of my favs. Black Beans and Rice......my way

Red, yellow, orange bell peppers, onions, black beans, turkey kielbasa.

Sometimes I use Rice-a-Roni Long Grain and Wild rice.

Prepare the rice.

While the rice is cooking, brown some turkey kielbasa in some olive oil.

Chop red, yellow and orange bell peppers, onion and add to the kielbasa to sauté till soft.

Drain and rinse a can of seasoned black beans and add to the peppers, onion etc.
Season with Franks red hot, Worcestershire sauce, chili powder, cumin  and soy sauce. Add a bit of heat with you're favorite hot pepper shake.( I make my own) cover and simmer till warmed through.

Mix the peppers and such with the rice and serve with shredded parm or asiago cheese.

Seriously delicious!

Tonight it was home made pasta and white clam sauce with shrimp.
In the pan.....( I don't do proportions for this kind of recipe. It just happens)
1 can chopped clams with juice.
Olive oil
Chopped garlic
Black opal Basil flowers
Greek oregano
Salt, pepper
Crushed red pepper
White wine ( I used Pinot Grigio)
Raw, peeled, deveined shrimp.

1 pile of home made pasta. This is thin spaghetti

Sauté the pan ingredients till reduced about half and add the shrimp

simmer covered till the shrimp are tender

Serve with fresh shredded asiago or Parmesan and a side of iceberg lettuce with a lite vinaigrette. I like malt vinegar.

I make pasta often using the  Kitchenaid pasta rollers and cutters. Takes me about 45 minutes start to finish to produce fresh pasta that blows store bought away.

Well worth the effort.
