I've got a smoked corned beef briscuit on my mind. Maybe this weekend. The electric smoker doesn't care how cold it is outside.

Funny you should say that. The other day I was splitting firewood and got into a bunch of cherry. I was thinking, "Boy this would be good for smoking."

I've got two whole racks, all rubbed down, and in the fridge getting sweet for Sunday!  ;D

Steamed some and smoked some. Came out great.

Venison,pork,beef,rabbit.

Contemplating smoking corned beef for March 17th. Love to have options, given we have a house full of people over for a St Patrick’s Day birthday party. Does anyone have any tips on smoking corned beef?

Yea
Get the smoke into it heavy in the first hour or two.  Then wrap it and go low at about 190-200 until your meat thermometer shows you what you want.
This will retain most of the juices.
Then rest it in the foil wrap for 15-20 minutes before carving it.

There's not a drop of Irish blood in my body but I think I could live on corned beef ,cabbage and potatoes....    8)

Well, my birthday is the 16 th, so that's the day for smoked corned beef. Here's my recipe.

The sauce:
1 c. Beef broth
1/3 c bourbon
1/4 c molasses
1/3 c. Brown sugar
2 tbsp brown mustard.

Heat to a gentle boil then cool

Soak the corned beef in cold water for at least a couple hours to remove some of the salt
Coat with brown mustard and your favorite rub
Smoke at  250 2.5 hrs or til it hits 160* put the smoke to it in the first part of the cook.
Remove from smoker, place in foil pan, cover with sauce and cover with tin foil
Cook at 250 to 190* meat temp

Remove from smoker, reduce sauce and juice to a glaze
Coat meat with the glaze and return to smoker at 250* til, meat temp is 195*

Remove and rest for at least 20 minutes.

We like ours on kimmelweck rolls topped with sweet home made BBQ sauce.
