Ran 16 pounds of x-sharp cheddar through some cherry wood smoke this morning. Did some yellow and white cheese because my grandson says yellow tastes better. His dad like the white. As far as I'm concerned, cheese is cheese.


Vac sealed and ready for a couple month nap.


Going to pick up another 20 pounds next payday to do for next summer.

Thanks John. I picked up a small flat today. Just 3 lbs or so. It's just my Bride and me so we don't need a lot. I have the rub you used in my collection. Also picked up a couple pounds of center cut bacon to smoke up some pig candy.

I'll smoke up the last of my Cayenne and Firecracker chilis too.

Well, my cardiologist isn't gonna get a sample, so I'm probably ok. A lot of that fat wil render away anyhow.

The brisket is Soaking in some cold water right now to get some of the salt out. Getting the bacon ready to make "pig candy"

He won't get any of that either.

Well.....the damned smoker quit again. No idea why. 2/3 of the way through the "pig candy" cook with a corned beef flat in waiting.

So, I dropped back 20 and punted. The bacon was finished off in the oven at 350 and while not the same texture as the last batch from the smoker, it's still crazy delicious. The brisket is in the oven now at around 225 and has hours to go.

The best I could do under the circumstances.

Tomorrow I'm going to swap controls with my neighbor's unit to see if it's the electronics or not. He bought the same smoker I did. I could have used his to do the cook, but I was quite frustrated and  ready for a beer and the couch.

I'm sure it'll turn out ok anyway.

I'm making the best of it. Following a Food.com recipe for baking in the oven. It's got another hour or so. Just glad I didn't buy a 6 lb'er. This one's just over 2.5 lbs. I've got some good deli rye, Swiss, Russian dressing and kraut in the fridge. We'll have Reuben's on the griddle later.

  That sucks Bob, we are chasing a ghost in our dehydrator as well. Everything looks perfect, fan works, just wont make any heat. Gonna clean up the connectors in the thermostat, but it looks brand new. IDK I'm at a loss, its only 2 years old.
