I never liked the beer batters as much as a good bread or cracker crumb coating but this one nocked my socks off.
 1/2 cup flour
 1/3 cup cracker crumbs [ I used smashed chicken in a bisket crackers { they were handy}]ritz or townhouse will work.
 3 tsp creole seasoning             
 1 tsp lemon pepper
 1-2 tsp garlic powder
 1 can of beer   [ need about 3/4]
1-2 lbs of walleye , perch , striper ,ect.
  Combine first 5 ing. add beer using a wire whisk make a batterwith a consistency of cream[ add more flour if to thin or beer if to thick] while sitting , batter will thicken.
  Dredge fillets in another 1 cup of flour then dip in batter, put fillets in 375degree skillet with 1/2 inch of veg oil
[or deep fry] until golden brown.
   I was going to show a photo but I ate them all before I could find my camera... :laugh:
Catch and release in a hot pan of grease.

 I did some perch, walleye and pike fillets last night for some guests and got a 2 thumbs up, the pike was voted the best tasting  ;D.
Catch and release in a hot pan of grease.
