Agree completely! Salt, black pepper, and garlic are my go-to combination for any fish- unless I get "creative". Then I usually wind up wishing I used the salt, black pepper and garlic combo.

We do two of these type trips each year and try and keep it simple. Salt, pepper, garlic powder, onion powder, crushed red pepper, and maybe two or three "mixes" like Mcormic Steak seasoning, and I have a roasted pepper n garlic mix that goes well on alot of things...
We eat alot of fish as im sure you guys will. I try and make them  a bunch of diff ways. We have fried 3-4 times but I change the breading up each time. We also always make a big pot of chowder on our sept trip. Real easy to do when roughing it with canned veggies. Also a new favorite is walleyes with some runny eggs for breakfast. I bring a small container of a "blackening" mix and put a little on the filets and cook them in just a little butter...

I have a mix I came up with that is nice, good flavor without killing the fish. I'll dig it up, I think I know where it is.  ??? Works better on thinner filets like perch or smaller eyes...

Ok, here it is...
DC's Blackened Seasoning Mix
I use some in alot of things - homefries, mac salad, tartar sauce, grilled veggies, chicken salad, ect.
When I use it on fish I dont coat them completely like most recipies call for.  Not trying to kill the flavor, just sprinkle a decent amount on. Sometimes I do the fish in a hot dry pan, other times in a med pan with a little butter.  8)

4 tsp onion powder
4 tsp garlic powder
2 tsp pepper - white, black, or mixed
2 tsp thyme
2 tsp oregano
4 Tbls or paprika - I use sweet
8 tsp salt
1 or 2 tsp Cayenne - your call
and 2 tsp "lemon pepper".
*note* all measurements are teaspoon except the paprika...

I have used some good pre made stuff but decided to try my own. Now I make batches and keep them in empty spice shakers...  8)

Paparika?  I thought you were going to fish?  Taters in the AM? Sorry bud if ya have time to cook in the AM you're doing something wrong.  While eating these taters with paparika, do your shoes & belt match?   ::) ::)  Last I checked real fisherman grabed whatever was there on their way out the door to fish, they didn't worry about the reddish orange powder on the taters.  Are you sure Rachel Ray or Martha Stewart isn't flying in to meet you?  :-*
I was berated for fishing & asked recently by a PETA type.  You don't keep fish do you?  I responded "No I don't like aquariums. I just treat them like a quick haircut, & take a little of the sides"

On a serious note, Montreal Steak seasoning.  You can buy the larger container with the grinder built in the top, or spicy Montreal (with added red pepper.)  It has all the basics ya need.

Tell ya right now I take my salt taters that are left over from the night before and dice em up in the morning. Little olive oil in the bottom of the pan and throw em in with some rosemary and a little salt and fresh ground pepper. Man the rosemary is good on em!
Opinions are like @ssholes. Everybody has one and they all stink.
