Black vs brown vs yellow?

Bullheads are usually one of my favorite eating fish. A lot of times I didn't even have to soak them, just dipped them in milk, tossed in breadcrumbs then fried. When I caught a bullhead through the ice I figured it'd be a good tasting fish since it was the middle of winter and only soaked it about an hour in milk. Turned out to taste muddy  :-\ I noticed the bullhead had light colored chin barbels but the good tasting bullheads I've caught in spring and summer during past years were black and tasted better.

Is it the water or the species?

around here we have lake run bullhead we call yellow bellys there the good tastin ones then we have residents that are fat slobs with white bellys that taste like a oil drum
