How long do you leave the beans in and do you cover them? I might through some in..
I typically use Grandma Browns beans and they are less soupy.
This batch used Bush’s because my buddy Darin donated the large can.
Grandma Browns will thicken up in less time. Like 5-6 hrs
Those Bush’s I left in there for almost 8 hrs before they got to the consistency I prefer.
I smoke for an hour then stir them
This helps mix the smoky crust down into them and also helps to release moisture. Then I add more chips and smoke another hour, stir and repeat till done.
The large pan had brown sugar, chopped onions and a lb of cut up raw bacon in with the beans.
The small pan had jalapeño and a small can of mushrooms in it. I also sprinkled in some pork rub seasoning I like. I also added 1/4 bottle of lime Caribbean hot sauce to them.
You can add anything you like.
Cheese works too!
Oftentimes I will smoke pork on racks above the pan of beans allowing the meat drippings to fall into the beans for added flavor.
