Looks great Getem! Hey Bob, lets see how you do your bullheads. My 2 go to's are xvoo, Cajun then grilled and Seasoned flour and fried. Foil wrapped with lemon and butter/veggies is a distant 3rd.

Had a craving for Home made Alfredo that had to be scratched.... Chicken Broccoli Alfredo over Spegetti! Not to pat myself on the back to hard, but this was my greatest Alfredo of all time.

Yesterday I deep fried them. I had oil in the fryer from  egg rolls that was still good. They were double dipped in House Autry Cajun Seafood breading.

I don't normally deep fry fish, but I didn't  want to waste the oil. My favorite is to filet the bullhead and grill them in parchment paper on the Weber. I put a pat of butter under the filets and top them with our home made salsa and Parmesan cheese. It's really tasty.

If you haven't learned the value of parchment paper for meats and veggies on the grill.....you need to. It imparts an awesome roasted flavor to anything you cook. Whatever  you're cooking, just wrap it up tight and cook indirect at 350-400*. I've done everything from asparagus to meat loaf this way. It's pretty much foolproof......not that y'all are fools mind you. But I can be at times. ;)

I make a mean Alfredo as well. But only about 3-4 times a year. My Bride loves scallops and home made pasta with Alfredo. But, it's a heart attack waiting to happen. So I limit our consumption.

3 hours of smoke then in oven sealed in pot for about 5-6 hours fall apart!

Last night we had what we call "The Egg Thing"
Used turkey kielbasa in this one. You can use any kind of meat, sausage, bacon and any choice of vegetables. It's a "Whatcha Got" kind of dish.

Tonights fixins'...
5 whole eggs
1/2c. 1% milk
Salt and pepper to taste
Chiffonade of spinach
Diced red onion
Broccoli florets
Chopped sweet bell pepper
Grated extra ...extra sharp cheddar


Sauté the meat on medium low heat

Add the broccoli and onions

Cover on low heat to steam sauté the broccoli. You can add a couple tablespoons of water or broth to speed up the process

Add the peppers when the broccoli is tender and cook covered for a few minutes till the peppers are tender

Top with the spinach and cheese, cover and cook on low heat

Have a piece of fresh bread and butter while you're waiting

Cook covered on low heat until the egg is completely set about 10 -15 minutes. I just wiggle he fry pan around to see if there's any loose egg on top. You definitely do not want uncooked egg in this dish.

We like ours with a topping of home made salsa


I make enough from this recipe for my Bride and I to have leftovers the next day. It's one of the only things she'll eat as leftovers.

Well I went to a small town semi local grocery shop to see what they had, mostly to cure the boredom, but trying to stay away from the crowd. I didn't need anything but was looking for something to change it up. Found these beauties....
